Keto Greek Yogurt Banana Bread

Ingredients
  

Dry ingredients
  • 1 ½ cups almond flour (not almond meal)
  • ¼ cup coconut flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon (optional)
Wet ingredients
  • 2 large ripe bananas (medium-sized, the darker the better)
  • 2 large eggs
  • ½ cup plain greek yogurt (or vanilla greek yogurt for extra sweetness)
  • cup monk fruit sweetener or erythritol (adjust to taste)
  • 1 tsp vanilla extract
Add-ins
  • ½ cup chopped walnuts or pecans
  • to taste sugar-free chocolate chips
  • a sprinkle oats

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  2. Mash bananas, then mix with eggs, Greek yogurt, sweetener, and vanilla.
  3. Whisk almond flour, coconut flour, baking soda, salt, and cinnamon in a bowl.
  4. Fold dry ingredients into wet mixture; add optional nuts, oats, or chocolate chips.
  5. Pour batter into pan, bake 45–55 minutes, cool before serving.

Notes

For extra flavor, add a dash of cinnamon or vanilla.
