Method
- Preheat oven to 350°F (175°C).
- Cream butter, 1/2 cup granulated sugar, and powdered sugar until light and fluffy.
- Gradually add flour and mix until just combined. Do not overmix.
- Press dough into an ungreased 9x13 inch baking pan.
- Bake for 20-25 minutes, or until the crust is lightly golden.
- Whisk eggs, 1 1/2 cups granulated sugar, 1/4 cup flour, baking powder, and salt.
- Stir in lemon juice and lemon zest until well combined.
- Pour lemon filling over the warm crust.
- Bake for an additional 20-25 minutes, or until the filling is set.
- Let cool completely before cutting into squares or bars.
- Dust with powdered sugar before serving.
Notes
For a more intense lemon flavor, add an extra tablespoon of lemon zest to the filling.
