Ingredients
  

Crust
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 2 cups all-purpose flour
Filling
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup lemon juice freshly squeezed
  • 2 tablespoons lemon zest
Garnish
  • Powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream butter, 1/2 cup granulated sugar, and powdered sugar until light and fluffy.
  3. Gradually add flour and mix until just combined. Do not overmix.
  4. Press dough into an ungreased 9x13 inch baking pan.
  5. Bake for 20-25 minutes, or until the crust is lightly golden.
  6. Whisk eggs, 1 1/2 cups granulated sugar, 1/4 cup flour, baking powder, and salt.
  7. Stir in lemon juice and lemon zest until well combined.
  8. Pour lemon filling over the warm crust.
  9. Bake for an additional 20-25 minutes, or until the filling is set.
  10. Let cool completely before cutting into squares or bars.
  11. Dust with powdered sugar before serving.

Notes

For a more intense lemon flavor, add an extra tablespoon of lemon zest to the filling.
