Method
- Preheat oven to 350°F (175°C).
- Cream butter and cake mix until combined.
- Beat in eggs and lemon juice (and zest, if using) until smooth.
- Chill dough for 30 minutes.
- Roll dough into 1-inch balls.
- Roll each ball in powdered sugar.
- Place cookies on baking sheet, 2 inches apart.
- Bake for 8-10 minutes, or until edges are golden.
- Cool on baking sheet before transferring to a wire rack.
Notes
For a tangier flavor, add more lemon zest.
