  • 1 box lemon cake mix (15.25 oz)
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest optional
  • 0.5 cup powdered sugar for coating

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and cake mix until combined.
  3. Beat in eggs and lemon juice (and zest, if using) until smooth.
  4. Chill dough for 30 minutes.
  5. Roll dough into 1-inch balls.
  6. Roll each ball in powdered sugar.
  7. Place cookies on baking sheet, 2 inches apart.
  8. Bake for 8-10 minutes, or until edges are golden.
  9. Cool on baking sheet before transferring to a wire rack.

Notes

For a tangier flavor, add more lemon zest.
