Ingredients
  

Shortbread Dough
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
Filling
  • 1/2 cup lemon curd store-bought or homemade
  • Powdered sugar for dusting (optional)

Method
 

  1. Preheat oven to 325°F (160°C).
  2. Cream butter, sugar, and salt until fluffy.
  3. Gradually add flour, mix until just combined.
  4. Divide dough, roll out to 1/4 inch thickness.
  5. Cut out shapes and place on baking sheet.
  6. Repeat with remaining dough.
  7. Bake for 12-15 minutes until golden.
  8. Cool on baking sheet, then transfer to wire rack.
  9. Spread lemon curd on half of the cookies.
  10. Top with remaining cookies to create sandwiches.
  11. Dust with powdered sugar and serve.

Notes

For a richer flavor, use high-quality butter. Store in an airtight container for up to 3 days.
