Method
- Mix peaches with sugar and vanilla, then set aside.
- Combine flour, oats, baking soda, and salt in a bowl.
- Add melted butter to dry ingredients and mix until crumbly.
- Fold in peach mixture into the crumbly mixture.
- Drop spoonfuls onto a baking sheet and bake at 350°F (175°C) for 15-20 minutes until golden.
Notes
For extra flavor, add a sprinkle of cinnamon or nutmeg to the dry ingredients.
