Ingredients
  

Bananas
  • 2 to 3 medium very ripe bananas, mashed
  • 1/2 cup light brown sugar, packed
  • 1/2 cup salted butter, melted
  • 1/2 teaspoon vanilla essence
  • 1 large egg
  • 3/4 cup semi-sweet chocolate chips (or swap with chopped nuts)
  • 1 1/4 cups whole wheat flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a bowl, mash the bananas and mix in melted butter, sugar, vanilla, and egg until well combined.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, then fold in chocolate chips.
  4. Pour batter into the prepared pan and smooth the top.
  5. Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Let cool before slicing.

Notes

For extra flavor, add a handful of chopped nuts or a sprinkle of sea salt on top before baking.
