Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
Pecan Topping
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. Mix dry ingredients in a bowl. Cream butter and sugars, then add eggs, pumpkin, milk, and vanilla.
  3. Combine wet and dry ingredients until just mixed. Fold in chopped pecans.
  4. Pour batter into pan. Mix topping ingredients and sprinkle over batter.
  5. Bake for 60-70 minutes until a toothpick comes out clean. Cool before serving.

Notes

Ensure not to overmix the batter to keep the bread moist and tender.
