  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
Pecan Topping
  • 1/4 cup brown sugar for topping
  • 1/4 cup chopped pecans for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. Mix dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger.
  3. Cream butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time, then stir in pumpkin, milk, vanilla.
  4. Combine dry and wet ingredients; fold in chopped pecans. Pour into pan.
  5. Mix topping ingredients and sprinkle over batter. Bake 60-70 minutes until a toothpick comes out clean.
  6. Cool 10 minutes in pan, then transfer to wire rack to cool completely.
