  • 1 cup grated zucchini (about 1 medium)
  • 3 ripe bananas mashed bananas
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 cup unsalted butter, softened (or vegetable oil)
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Mix dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg.
  3. Cream butter and sugars until light and fluffy. Beat in eggs and vanilla.
  4. Stir in mashed bananas and grated zucchini. Gently fold in nuts if using.
  5. Pour batter into prepared pan, bake for 60-70 minutes until a toothpick comes out clean. Cool before slicing.

Notes

For extra flavor, add a handful of chopped nuts or chocolate chips.
