Mom's Homemade Chili Oil

Ingredients
  

Oil
  • 0.75 cup neutral oil (such as canola, vegetable, peanut, grapeseed, or avocado oil)
  • 10 cloves garlic, finely minced
  • 3 green onions green onions, chopped
  • 0.75 cup soy sauce
  • 0.33 cup Chinese black vinegar
  • 3 tablespoons Chinese-style chili flakes
  • 1 tablespoon gochugaru (Korean chili powder)

Method
 

  1. Prep garlic and green onions by finely chopping.
  2. Mix soy sauce, black vinegar, chili flakes, gochugaru, garlic, and green onions in a heat-safe bowl.
  3. Heat oil in a small saucepan over medium until 225–250°F, then pour over the chili mixture.
  4. Stir to combine and let sit for flavors to meld.
  5. Taste and adjust with more soy or chili flakes if desired.

Notes

Store in a sealed jar for up to a month. Use a thermometer to ensure proper oil temperature.
