Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
Wet Ingredients
  • 0.5 cup unsalted butter, softened
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup old-fashioned rolled oats
  • 1 cup peeled and finely chopped apples such as Granny Smith or Honeycrisp
  • 0.5 cup chopped walnuts or pecans (optional)
  • 0.25 cup chopped white chocolate or white chocolate chips (optional)
  • 1 tablespoon brown sugar (for topping)
  • 0.5 teaspoon ground cinnamon (for topping)

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  2. Mix flour, cinnamon, nutmeg, baking soda, and salt in a bowl.
  3. Cream butter, granulated sugar, and brown sugar until fluffy; add egg and vanilla, mix well.
  4. Gradually add dry ingredients, then fold in oats, apples, nuts, and white chocolate.
  5. Drop tablespoons onto baking sheets, sprinkle with cinnamon and brown sugar for topping, then bake 12-15 minutes until edges are golden.
  6. Cool on sheets 5 minutes, then transfer to wire racks to cool completely.

Notes

For extra flavor, add more nuts or white chocolate chips as desired.
