Old Fashioned Banana Bread

Ingredients

  • 3 medium bananas, extra ripe (mashed) about 1 1/4 to 1 1/2 cups
  • 1 cup white granulated sugar
  • 1/3 cup canola oil
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 1/3 cups all purpose flour (sifted)
  • 1 tsp baking soda
  • 1/2 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C). Prepare a 9x5 loaf pan with nonstick spray and parchment paper.
  2. Mash bananas in a large bowl, then add sugar and mix.
  3. Stir in eggs, vanilla, and canola oil until combined.
  4. Sift flour, baking soda, and salt; add to banana mixture and stir just until combined.
  5. Pour batter into pan and bake for 45-50 minutes until a toothpick comes out clean.
  6. Cool completely before removing from pan.

Notes

Use very ripe bananas for best flavor and sweetness.
