One Pot Chili

Ingredients
  

Base
  • 2 tablespoons Olive Oil
  • 1 large Onion diced
  • 3 cloves Garlic minced
Vegetables
  • 2 diced Bell Peppers red and green, diced
  • 1 large Carrot diced
  • 2 stalks Celery diced
Meat (optional)
  • 1 pound Ground Beef or Turkey optional
Canned Beans
  • 2 cans Beans drained and rinsed, black and kidney
Canned Diced Tomatoes
  • 2 cans Diced Tomatoes 15 oz each
Broth
  • 2 cups Beef or Vegetable Broth
Spices
  • 2 tablespoons Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
Seasoning
  • to taste Salt and Pepper

Method
 

  1. Heat olive oil in a large pot, sauté diced onion for 5 minutes, add minced garlic and cook 1-2 minutes.
  2. Add diced bell peppers, carrot, and celery; sauté until softened, about 5-7 minutes.
  3. If using meat, push veggies aside, add ground meat, cook until browned, then drain excess fat.
  4. Stir in beans and diced tomatoes, add spices, season with salt and pepper.
  5. Pour in broth, bring to a boil, then reduce heat, cover, and simmer for 30-40 minutes.

Notes

Feel free to top with sour cream, cheese, or avocado for extra flavor.
