- Heat olive oil in a large pot, sauté diced onion for 5 minutes, add minced garlic and cook 1-2 minutes.
- Add diced bell peppers, carrot, and celery; sauté until softened, about 5-7 minutes.
- If using meat, push veggies aside, add ground meat, cook until browned, then drain excess fat.
- Stir in beans and diced tomatoes, add spices, season with salt and pepper.
- Pour in broth, bring to a boil, then reduce heat, cover, and simmer for 30-40 minutes.
