Method
- Preheat oven to 350°F (175°C). Grease a 9" x 5" loaf pan.
- Whisk together flour, cinnamon, baking powder, baking soda, and salt. Set aside.
- Beat butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time, then vanilla.
- Reduce speed, add flour mixture in three parts, alternating with sour cream. Mix in bananas and nuts if using.
- Pour batter into pan. Bake 50-55 minutes until golden and a toothpick comes out clean.
- Cool 10 minutes in pan, then transfer to wire rack to cool completely.
Notes
For extra flavor, sprinkle nuts on top before baking or fold into the batter.
