  • 1/2 cup salted butter (melted)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs eggs
  • 4 medium bananas (going brown preferably as they are sweeter)
  • 1/2 tsp vanilla
  • 1 tsp baking soda
  • 1 1/2 cups all-purpose flour
  • 1 cup chopped pineapples or pineapple tidbits (drained)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix melted butter, sugars, eggs, and vanilla until well combined.
  3. In a separate bowl, whisk together flour and baking soda. Gradually add to wet ingredients.
  4. Fold in mashed bananas and chopped pineapples.
  5. Pour batter into prepared loaf pan and bake for 60 minutes or until a toothpick inserted comes out clean.

Notes

Use overripe bananas for extra sweetness and flavor.
