Ingredients
  

Dry ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Wet ingredients
  • 1 cup granulated sugar
  • 3 ounces cream cheese, softened
  • 1 large egg, beaten
  • 3 teaspoons vanilla extract
  • ½ cup sour cream
  • 1 can (20 oz) crushed pineapple, drained reserve 2 tablespoons juice
  • 1⅓ cups powdered sugar (for glaze)
  • 2 tablespoons reserved pineapple juice (for glaze)

Method
 

  1. Preheat oven to 350°F (175°C); grease a loaf pan.
  2. Mix dry ingredients; beat cream cheese and sugar until smooth.
  3. Add egg and vanilla; stir in sour cream and pineapple.
  4. Combine wet and dry; pour into pan and bake 55–60 mins.
  5. Cool, then drizzle glaze made from powdered sugar and pineapple juice.

Notes

Ensure pineapple is well drained for best texture.
