Method
- Preheat oven to 350°F (175°C); grease a loaf pan.
- Mix dry ingredients; beat cream cheese and sugar until smooth.
- Add egg and vanilla; stir in sour cream and pineapple.
- Combine wet and dry; pour into pan and bake 55–60 mins.
- Cool, then drizzle glaze made from powdered sugar and pineapple juice.
Notes
Ensure pineapple is well drained for best texture.
