Ingredients
  

Broth and Beans
  • 6 cups chicken stock
  • 1 pound great northern beans soaked overnight or 3-4 cans
  • 2 medium onions chopped
  • 6 cups diced cooked chicken
  • 2 jalapeno peppers jalapenos seeded and diced
  • 1.5 teaspoons oregano
  • 2 teaspoons cumin
  • 0.25 teaspoon cayenne pepper
  • 2 cloves garlic minced
  • 1 cup salsa
  • 1 tablespoon vegetable oil
  • 1 pinch salt to taste

Method
 

  1. Simmer beans, half the onions, and half the garlic in chicken stock for 2 hours until beans soften.
  2. Add cooked chicken and salsa to the pot.
  3. Seed, dice jalapenos, and sauté with spices, remaining onions, and garlic in oil.
  4. Add sautéed mixture to the pot and simmer for 1 hour.
  5. Garnish with sour cream, cheese, and cilantro before serving.

Notes

For a spicier chili, add more cayenne or jalapenos.
