Method
 

  1. Whisk eggs, cottage cheese, salt, and pepper until well combined.
  2. Heat butter in a nonstick skillet over medium-low heat.
  3. Pour egg mixture into skillet; let sit for 30 seconds before stirring.
  4. Gently push eggs from edges toward the center.
  5. Continue cooking, stirring every 30-45 seconds to create fluffy curds.
  6. Remove from heat when eggs look slightly underdone.
