Shamrock Shake Cake

Ingredients
  

Cake
  • 240 grams flour
  • 30 grams cornstarch
  • 4 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 350 grams sugar
  • 5 egg whites
  • 1 teaspoon vanilla extract
  • 240 grams milk
  • 160 grams butter, cut into cubes
Frosting
  • 270 grams butter, softened
  • 1/2 teaspoon table salt
  • 460 grams powdered sugar
  • 30-60 grams cream as needed
  • 1 teaspoon mint extract or oil
Decoration
  • green food coloring
  • white chocolate
  • maraschino cherries
  • gold luster stars

Method
 

  1. Preheat oven to 350 degrees F and grease and flour 3 6-inch round pans.
  2. Microwave butter until slightly melted.
  3. Mix flour, cornstarch, baking powder, salt, and sugar.
  4. Whisk milk, vanilla extract, and egg whites.
  5. Add melty butter to flour mixture.
  6. Stream in milk and egg mixture; beat until smooth.
  7. Divide into prepared pans.
  8. Bake for 16-20 minutes.
  9. Allow to cool completely.
  10. Beat softened butter until fluffy.
  11. Add salt and sugar; add cream if needed.
  12. Add the mint extract.
  13. Divide batter; add green food coloring to one bowl.
  14. Place one layer on a cake stand and top with 1/2 cup frosting.
  15. Repeat until all 3 layers are stacked.
  16. Add green frosting to the bottom half of the cake.
  17. Repeat with the white frosting for the upper half of the cake, saving 1/2 a cup for later.
  18. Blend and smooth the frostings together.
  19. Chill in the fridge.
  20. Melt white chocolate; pour over edges.
  21. Pipe poofs on top with extra white frosting.
  22. Place a cherry on top of each poof and add gold star glitter.

Notes

For a richer flavor, use brown butter in the cake batter.
