  • 14 ounces Smoked Kielbasa beef sausage
  • 1 cup butternut squash diced
  • 2/3 bell pepper yellow, red or orange, diced
  • 1 small zucchini cut into half moons
  • 1/3 red onion cut into thick slices
  • 2 tablespoons olive oil
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon garlic salt
  • 0.25 teaspoon ground black pepper

Method
 

  1. Preheat oven to 400°F.
  2. Steam butternut squash in the microwave for 2 minutes.
  3. Add remaining veggies and beef sausage to a large mixing bowl.
  4. Drizzle with olive oil and sprinkle in thyme, smoked paprika, garlic salt, and pepper.
  5. Toss to combine.
  6. Pour onto a baking sheet brushed with olive oil.
  7. Bake for 25 minutes or until veggies are cooked through and slightly brown.

Notes

For easier cleanup, line the baking sheet with parchment paper.
