- Preheat oven to 350°F (175°C).
- Cream butter, granulated sugar, and brown sugar until fluffy.
- Beat in egg, lemon juice, lemon zest, and vanilla until combined.
- Whisk together flour, baking soda, and salt in separate bowl.
- Gradually add dry ingredients to wet, mix until just combined.
- Roll dough into 1-inch balls.
- Roll each ball in powdered sugar, coating generously.
- Place cookies on a baking sheet lined with parchment paper.
- Bake for 8-10 minutes, until edges are golden and centers are soft.
- Cool on baking sheet, then transfer to wire rack to cool completely.
Notes
For extra lemony flavor, add a teaspoon of lemon extract to the dough.
