Ingredients
  

Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet ingredients
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 4 ripe bananas bananas, mashed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Cream butter and sugar, then add eggs, bananas, and vanilla.
  4. Combine wet and dry ingredients, fold in cinnamon if using.
  5. Divide batter into muffin cups and bake for 18-20 minutes.
  6. Cool muffins before serving.

Notes

For extra flavor, add chopped nuts or chocolate chips.
