Method
- Heat olive oil in a large pot. Sauté onion and bell pepper until softened, about 5 minutes.
- Add garlic, chicken, tomatoes, beans, corn, broth, and spices. Bring to a boil, then simmer for 30 minutes.
- Remove chicken, shred, and return to the pot. Simmer for 10 more minutes before serving.
Notes
Using leftover rotisserie chicken can save time. Adjust beans for variety or add diced jalapeños for extra heat.
