Ingredients
  

Protein
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 diced onion
  • 2 cloves garlic, minced
  • 1 diced bell pepper (any color)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste Salt and pepper
Optional toppings
  • shredded cheese, sour cream, cilantro, avocado as desired

Method
 

  1. Heat olive oil in a large pot. Sauté onion and bell pepper until softened, about 5 minutes.
  2. Add garlic, chicken, tomatoes, beans, corn, broth, and spices. Bring to a boil, then simmer for 30 minutes.
  3. Remove chicken, shred, and return to the pot. Simmer for 10 more minutes before serving.

Notes

Using leftover rotisserie chicken can save time. Adjust beans for variety or add diced jalapeños for extra heat.
