Ingredients
  

Spice Mix
  • 4 tbsp chili powder
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tsp ground cayenne pepper
  • 1.5 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
Main Ingredients
  • 2.5 lbs ground beef (15% or lower)
  • 0.5 medium yellow onion
  • 2 cloves garlic
  • 2 large jalapeno
  • 1 tbsp salt
  • 30 oz canned diced tomatoes
  • 32 oz pinto beans
  • 32 oz kidney beans
  • 4-6 oz grated cheese
  • 0.5 medium yellow onion
  • 1-2 large jalapenos

Method
 

  1. Mix all chili spices together.
  2. Chop onion, garlic, and jalapenos.
  3. Blend a cup each of kidney and pinto beans; set aside.
  4. Brown ground beef in skillet, then add 3 tbsp chili seasoning, salt, onion, garlic, and half of jalapenos; cook 2 minutes.
  5. Add beef, tomatoes, beans, and bean paste to crock pot; cook on low 4-6 hours. Adjust salt to taste before serving.

Notes

Adjust spice levels to taste and serve with cheese and garnishes.
