Ingredients
  

Dry ingredients
  • 140 g brown rice flour
  • 80 g tapioca starch
  • 1.5 tsp baking soda
  • 0.5 tsp sea salt
Wet ingredients
  • 0.5 cup full-fat Greek yogurt light Greek yogurt may work
  • 0.33 cup maple syrup
  • 2 large eggs
  • 1.5 tsp vanilla extract
Bananas
  • 3 large very ripe bananas about 350-360g minus peels

Method
 

  1. Preheat oven to 350°F (180°C).
  2. Mix dry ingredients in a bowl.
  3. Mash bananas and set aside.
  4. Combine yogurt, eggs, maple syrup, and vanilla; beat well.
  5. Add dry ingredients and mashed bananas; mix until combined.
  6. Pour batter into a parchment-lined loaf pan and bake 45-50 minutes.

Notes

Use ripe bananas for best flavor and sweetness.
