Ingredients
  

Sweet Potato
  • 1 large sweet potato peeled and diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Beef
  • 1 pound ground beef
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 cup water
Toppings
  • 1 cup cottage cheese
  • 2 tablespoons hot honey store-bought or homemade
  • green onions Optional toppings
  • red pepper flakes Optional toppings

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato with oil, salt, and pepper. Roast for 20-25 minutes.
  3. Cook ground beef in a skillet; drain grease.
  4. Season beef with garlic powder, onion powder, and paprika. Add water and simmer for 5 minutes.
  5. Assemble bowls with sweet potato and beef.
  6. Top with cottage cheese and hot honey.
  7. Optional: Garnish with green onions and red pepper flakes.
