Ingredients
  

Sweet Potatoes
  • 4 large sweet potatoes about 3 pounds
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup whole milk or heavy cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Pecan Streusel
  • 1 cup pecans, roughly chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch dish.
  2. Peel and boil sweet potatoes until tender, then mash until smooth.
  3. Mix mashed sweet potatoes with sugar, melted butter, milk, eggs, vanilla, cinnamon, nutmeg, and salt.
  4. Pour mixture into dish and prepare streusel by combining pecans, flour, brown sugar, melted butter, cinnamon, and salt. Sprinkle over casserole.
  5. Bake for 30-35 minutes until golden and heated through. Cool slightly before serving.

Notes

For a richer flavor, use heavy cream instead of milk.
