Method
- Heat olive oil in a large Dutch oven over medium heat. Add onions and jalapeños; cook 6–8 minutes until translucent.
- Add garlic and cook 1 minute until fragrant.
- Increase heat to medium-high. Add ground beef, salt, and pepper; brown for about 8 minutes, leaving some chunks.
- Reduce heat to medium. Add chili powder, cumin, oregano, and coriander; stir and cook 1 minute.
- Add tomato paste; cook 2 minutes. Stir in diced tomatoes and beef stock. Simmer 30–60 minutes until thickened.
Notes
For extra flavor, let the chili simmer longer for a richer taste.
