  • 1 teaspoon ground coriander
  • 3 ounces tomato paste
  • 28 ounces diced tomatoes
  • 2 cups beef stock

Method
 

  1. Heat olive oil in a large Dutch oven over medium heat. Add onions and jalapeños; cook 6–8 minutes until translucent.
  2. Add garlic and cook 1 minute until fragrant.
  3. Increase heat to medium-high. Add ground beef, salt, and pepper; brown for about 8 minutes, leaving some chunks.
  4. Reduce heat to medium. Add chili powder, cumin, oregano, and coriander; stir and cook 1 minute.
  5. Add tomato paste; cook 2 minutes. Stir in diced tomatoes and beef stock. Simmer 30–60 minutes until thickened.
