  • 2 tablespoons olive oil
diced onion
  • 1 medium onion diced
garlic
  • 3 cloves garlic minced
diced chicken breasts
  • 1 pound boneless, skinless chicken breasts diced
chicken broth
  • 2 cups chicken broth
white beans
  • 2 cans white beans drained and rinsed
chopped green chilies
  • 1 can chopped green chilies undrained
ground cumin
  • 1 teaspoon ground cumin
dried oregano
  • 1 teaspoon dried oregano
chili powder
  • 1/2 teaspoon chili powder
salt
  • to taste salt
black pepper
  • to taste black pepper
plain yogurt
  • 1/2 cup plain yogurt
coconut cream
  • 1/4 cup coconut cream
shredded cheddar cheese
  • 1/2 cup shredded cheddar cheese
chopped fresh parsley
  • 1/4 cup chopped fresh parsley
lime
  • 1 lime lime cut into wedges

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until soft, about 5 minutes. Stir in garlic and cook for 1 minute.
  3. Add chicken and cook until no longer pink, about 5-7 minutes. Pour in broth and add beans, chilies, and spices. Simmer for 20 minutes.
  4. Remove from heat, stir in yogurt, coconut cream, and cheese until melted. Garnish with parsley and serve with lime wedges.

Notes

For extra flavor, top with additional cheese or fresh cilantro.
