Ingredients
  

Potatoes
  • 2 pounds russet potatoes, peeled and diced
Meat
  • 1 pound ground beef
Vegetables
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
Dairy & Canned Goods
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 can cream of mushroom soup
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
Vegetables & Toppings
  • 1 cup frozen corn
  • 1 cup crispy fried onions (for topping)

Method
 

  1. Preheat oven to 350°F (175°C). Boil potatoes until tender, then drain.
  2. Cook ground beef until browned; add onion and garlic, cook until translucent.
  3. Mix potatoes, beef mixture, sour cream, cheese, milk, soup, spices, and corn. Transfer to a greased dish.
  4. Bake for 25-30 minutes, then top with fried onions and bake 10 more minutes.

Notes

For extra flavor, add chopped green onions or a dash of hot sauce before serving.
