Method
- Lay the spinach tortillas flat on a clean surface.
- Spread approximately 1/4 cup of hummus evenly over each tortilla, leaving a small border.
- Evenly distribute the shredded carrots, chopped cucumber, and chopped bell pepper over the hummus on each tortilla.
- Sprinkle feta cheese (if using) over the vegetables.
- Top with fresh spinach leaves.
- Tightly roll up each tortilla, tucking in the sides as you roll.
- Cut each wrap in half (optional).
- Serve immediately or wrap tightly in plastic wrap and refrigerate for later.
