  • 1 pound ground beef
  • 1 onion onion, chopped
  • 2 stalks celery, chopped
  • 1 green bell pepper green bell pepper, chopped
  • 2 cans (10-ounce) diced tomatoes with green chiles e.g., Rotel or Hunt's Seasoned Diced Tomatoes in Sauce for Chili
  • 1 can (14-ounce) tomato sauce
  • 0.25 cup water plus more as needed
  • 1.25 ounce chili seasoning e.g., McCormick® Mild Chili Seasoning Mix
  • 15 ounce kidney beans, undrained
  • 15 ounce pinto beans, undrained
  • to taste Kosher salt
  • to taste ground black pepper
  • 0.5 tablespoon white vinegar or to taste

Method
 

  1. Cook ground beef in a large pot over medium heat until browned, then drain excess grease.
  2. Add chopped onion, celery, and green bell pepper; cook until translucent, about 5 minutes.
  3. Stir in diced tomatoes, tomato sauce, water, and chili seasoning; add beans and season with salt and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1 hour.
  5. Stir in vinegar just before serving. Enjoy with toppings like cheese and sour cream.
