Ingredients
  

Meat
  • 3 pounds ground beef (85/15) drained, reserving 2 tbsp of fat
  • 1 1/2 cups yellow onion, finely diced
  • 2/3 cups celery, finely diced
  • 1/2 cup red bell pepper, finely diced
  • 1/2 cup green bell pepper, finely diced
  • 1 cup fresh tomatoes, finely chopped
  • 1 1/2 cups tomato juice
  • 15 oz crushed tomatoes in puree
  • 1 1/2 teaspoons Worcestershire sauce
  • 2 teaspoons monk fruit, granular (Lakanto)
  • 3 tablespoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon black pepper

Method
 

  1. Brown the ground beef in a large pot, drain most fat, reserving 2 tbsp.
  2. Add onions, celery, bell peppers, and tomatoes; cook for 5 minutes.
  3. Add tomato juice, crushed tomatoes, Worcestershire, monk fruit, and seasonings; simmer for 1 to 1.5 hours.
  4. Uncover and let sit for 10 minutes before serving. Top with cheese and onions if desired.
