  • 1 cup cottage cheese low-fat or full-fat
  • 1/4 cup milk dairy or non-dairy
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons sweetener honey, maple syrup, stevia, or sugar
  • Pinch salt Optional
  • Berries, granola, chocolate shavings Optional toppings

Method
 

  1. Combine cottage cheese, milk, vanilla extract, sweetener, and salt (if using) in a food processor or blender.
  2. Blend until smooth and creamy, scraping down the sides as needed.
  3. Taste and adjust sweetener as needed.
  4. Transfer to a serving dish or individual cups.
  5. Chill in the refrigerator for at least 30 minutes to allow the mousse to thicken slightly.
  6. Top with your favorite toppings and enjoy!

Notes

For a thicker mousse, use full-fat cottage cheese and chill for a longer period.
