  • 1 can white beans (15 oz) drained and rinsed
  • 1 can low-sodium chicken broth (14 oz)
  • 1 can diced green chilies (4 oz)
Vegetables & Aromatics
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
Spices
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt adjust to taste
  • 0.25 teaspoon black pepper
Additional
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup cream (or half-and-half)
  • 0.5 cup shredded Monterey Jack cheese optional for serving
  • 1 bunch fresh cilantro (chopped) for garnish
  • 1 lime wedges for serving

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Mix beans, broth, chilies, onion, garlic, and spices; pour over chicken.
  3. Cook on low for 6 hours, then shred chicken and return to the pot.
  4. Stir in cream, then serve garnished with cheese, cilantro, and lime.
