Ingredients
  

Protein
  • 1 lb boneless, skinless chicken breasts, cubed
Vegetables
  • 1 unit onion, diced
  • 3 cloves garlic, minced
Canned Goods
  • 2 cans white beans (15 oz each), drained and rinsed
  • 1 cup chicken broth
Spices & Seasonings
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 0.5 tsp ground coriander
  • 0.25 tsp cayenne pepper
  • to taste Salt and black pepper
Garnish
  • as needed Chopped fresh cilantro

Method
 

  1. Sauté onion and garlic in oil until softened, about 5 minutes.
  2. Add chicken and cook until lightly browned, about 5-7 minutes.
  3. Stir in beans, broth, cumin, oregano, coriander, and cayenne; season with salt and pepper.
  4. Simmer for 15-20 minutes until chicken is cooked and flavors meld.
  5. Serve hot, garnished with cilantro.

Notes

For extra flavor, add a squeeze of lime before serving.
